First time I've tried this recipe...very tasty! I received quite a few compliments from our dinner guests. A lot of the cream was not absorbed at the end of cooking and the potatoes needed some more time so I extending the cooking time by another 20 minutes. Next time I'll next cutting down the cream to 1 1/2 cups.

I made this exactly as Emeril had indicated in the recipe and the half and half sort of curdled after I took it out of the oven. It sort of lacked any zing to it and yet everyone else seems to have given it a five-star rating. Maybe I should have used a heavier cream.

I substituted the greens for spinach and used cheddar cheese and it came out great. Don't forget to put a pan underneath this in the oven or you'll have a hot mess to clean up!

I made these potatoes for my family and they loved and devoured them. I actually made a few "mistakes" that I liked - first, I used bacon instead of pancetta, for cost reasons. Also, I accidentally added twice as much bacon as I was supposed to, and it actually seemed better than if I didn't. I did use the "essence", but I decreased the salt and cayenne content. Overall, ooey gooey flavorful awesomeness!
