Ingredients

  • 1 tablespoon vegetable oil
  • 2 cups chopped yellow onions
  • 1 cup chopped celery
  • 1/2 cup diced carrot
  • Salt
  • Cayenne pepper
  • 4 bay leaves
  • 1 teaspoon chopped garlic
  • 4 cups clam juice
  • 3 cups tomatoes
  • 1 1/2 pounds new potatoes, quartered
  • 2 cups fresh sweet corn kernels
  • 1/2 cup finely chopped fresh parsley
  • 4 pounds raw assorted cleaned shellfish, (medium shrimp, shucked oysters, crabmeat, diced lobster meat, whole mussels and clams, etc)
  • 2 tablespoons finely chopped fresh parsley leaves

Directions

In a large saucepan, over medium heat, add the oil. When the oil is hot, stir in the onions, celery, and carrots. Season the vegetables with salt, cayenne, and bay leaves. Saute for 6 minutes, or until the vegetables are soft and tender. Stir in the clam juice and tomatoes and bring up to a boil. Add the potatoes and corn. Simmer for 15 minutes, or until the potatoes are fork tender. Season the seafood with salt and cayenne. Add the seafood and simmer the soup for 5 minutes. Stir in the parsley and ladle the soup into serving bowls.

    Easy & Tasty Chowder Recipe

Rated: 4 stars out of 5
While this was tasty, I did wind up adding about a tablespoon of old bay seasoning to give it a little more flavor. It was... an easy recipe but it took about 90 minutes in total.Read more

    Fabulous Chowder!!!

Rated: 5 stars out of 5
This recipe was delicious! I put 4 cups of seafood broth, one small bottle of clam juice and an extra cup od water +/-. I... also added a handful of uncooked arborio rice while simmering the broth, before putting in all the seafood. Once the rice was almost tender, I added the seafood, then cooked low for about 15-20 min. The arborio gave it a thick consistency. This recipe will go in my recipe box!!! Emeril you da man!!! Delish!Read more

    good combination with saffron

Rated: 5 stars out of 5
I combined the fish base from wolfgang pucks fish soup with the saffron onion, thyme, basil base. Then I followed the recipe... for the seafood chowder without the cayenne pepper (I didn't want to over power the saffron).Read more

I made this chowder, and it was excellent, I'm not sure if that would describe it. It was very easy to make and the taste was... incredable.Read more
