    I really wanted to make this the moment I saw the recipe, but I didn't have the right salad ingredients (though I had the ingredients for the dressing. So I made a salad of lettuce, a grated carrot, a diced apple, and two handfuls of peanuts. I used strips of chicken breast in place of the shrimp. It was delicious! I can't wait to make it with mango and shrimp!

    I made this shrimp salad for a surprise party and I think I was the most surprised of all by the rave reviews for my dish! This salad made a beautiful presentation and I prepared the shrimp and dressing a day in advance and tossed with the dressing just before serving. I served it cold instead of warm so that I could prepare it in advance. Everybody loved it.
