She-Crab Soup

Ingredients
  • 4 tablespoons butter
  • 4 tablespoons flour
  • 2 small onions, grated
  • 6 ribs of celery, grated
  • 1 tablespoon minced garlic
  • Salt and pepper
  • 1 teaspoon mace
  • 1 quart whole milk
  • 1 cup cream
  • 1 tablespoon Crystal hot sauce
  • 2 tablespoons Worcestershire sauce
  • 2 pounds crab meat, picked over for cartilage
  • 1 hard boiled egg, finely chopped
  • 1/2 cup sherry
  • 1 tablespoon finely chopped parsley
Directions

In the top of a double-boiler, melt the butter and flour together. Cook the mixture for 3-4 minutes for a blond roux. Stir in the onions, celery, and garlic. Season with salt, pepper, and mace. Cook the vegetables for 2 minutes. Whisk in the milk, cream, hot sauce, and Worcestershire. Bring the liquid up to a boil and reduce to a simmer. Simmer the soup for 15 minutes. Stir in the crab meat and continue simmering for 10-15 minutes. Reseason if necessary. Sprinkle the chopped eggs in the bottom of each bowl. Ladle the soup into each bowl. Drizzle the soup with the sherry. Garnish with chopped parsley.

    The flavors in this soup were delicious. The only thing I did different is omitted the egg, don't really see how it fits in. The sherry I served in shot glasses so guests could pour it in their bowls themselves. For the reviewer who said there was too much onion, maybe the onions that you used were too big. I used 2 onions that were about the size of tennis balls and didn't think the flavor was overwhelming at all.
    Too much onion! Tastes like onion soup instead of crab soup. I really like she crab soup and I want to taste crab! I left out the eggs, don't like the texture. After altering, it was good second time.
    a yummy treat for a special occasion. I left out the hard boiled egg. With all of the rich flavors and textures, it seems superfluous. For those unfamiliar, mace is the lacy outer coating found on a nutmeg. It has a similar flavor profile to nutmeg, but it is less assertive. The best substitute would be a little freshly grated nutmeg -- just a pinch.
    This is so easy to make and the only alteration I made to the soup was to add some Old Bay Seasoning to taste.
    This was exactly what we were looking for. Excellent creamy soup - perfect for a cold rainy day. We used 1lb crab meat and 1lb of shrimp and it was great
    We had a soups course at a recent holiday progressive dinner. There wasn't a drop left of this soup and there were five other soups the crowd had to choose from. At the end of the evening, I was presented with the award for the best dish. I don't know what mase is so I substituted old bay. Also, I added an extra tablespoon of Crystal Hot Sauce -- just to kick it up a notch!
    Restaurant quality with at home convenience. Simple to prepare. A delight to serve and say you made yourself!
    This is the best crab soup I have ever eaten. My husband says the same. We get our crabs fresh off our dock.
    Don't waste your crab meat on this recipe. His Asparagus Soup w/ Roasted Peppers & Crabmeat blows this recipe away.
    It takes a little while to make, but this is one of the best flavored cream of crab I've ever had.
    A little harder than it looks but worth the effort.
    I use a little variation but use this as a base recipe and it is great.
