Amazing! Served these for brunch this morning and decided on diced prosciutto instead of ham slice but otherwise, made them exactly as the recipe states. Rave reviews from my guests!. Thanks Emeril.

and Emeril's study proves that he is a wonderful chef. These shirred eggs are delicious and so rich with the yolks, cream, and cheese. Emeril's recipes are not so above the average cook that I shy away. The complexity of flavors in his dishes show his wonderful talent. I'm a huge fan of his and Food Network, Emeril is your best.

I, too was bored with our usual breakfast rotation, and was sure the Chef Lagasse would have a sure-to-please way of jazzing things up. This is easy, visually appealing, fun to eat and TASTY. Thanks.

We used maple bacon and hadn't any chives but used onion powder instead and it was still an easy brunch stunner. The possibilities are endless and cannot wait for our next creation. Thank you Emeril for another excellent meal. (if you want the eggs still a little runny, cook 4 minutes less at the end Ann and Greg
