I have searched for a simple yet tasty vinaigrette dressing and I will stop with this one. I read the reviews and I cut back slightly on the oil and it was FABULOUS!! It is a versitile recipe - I will try it as a marinade. Well worth the less than 10 minutes to make it. Definate keeper.

Awesome recipe. I added less oil (between 1/2 and 3/4 - and next time I might try only 1/2 - I love the balsamic flavor. I also added dried marjoram and oregno. This recipe would go great with fresh herbs also. In addition to dressing the salad, I used it to marinate the salmon and it worked great.

I have been on a hunt for a good balsamic vinaigrette for a long time, and I have bottles of store-bought "opened once-used once" dressings in the fridge to prove it. I use a little more balsamic becasue we like it zestier but this recipe is so good and so easy... I'd recommend it to anyone who's been hunting for a good dressing like me. I'm also going to try it out as a marinade and see how that goes.
I just felt like making a salad a few minutes ago and threw together the dressing in about 3 minutes max.
My only complaint is that it's so good, when I'm done with my salad I can't help but go get a slice of bread to sop up the rest.. and that isn't going to help my waistline!

Emeril.... As always you came through for me. I made this in five minutes and was eating my salad in 7.
I will never buy a bottle of store bought again.

I really liked this, and will definitely be keeping it. Nice balance of sweet and sour. However, I used extra virgin olive oil and I think the flavor of the oil came through a little strong. I might break the oil down into 2/3 EV and 1/3 light or perhaps another type of oil.
My eleven year old daughter, who was run out of the kitchen by the smell of the balsamic vinegar, was skeptical of it, but she loved the taste of it.

I agree it was very viniaigary, but I like Balsamic Vinegar. I added a little more pepper, and I think I will add some water because it was oily. All in all it was great and fast for our dinner tonight!

I used grapeseed oil cuz it was thawed and the olive oil was in the fridge solid. Glad I did now I see the reviews and comments of oiliness.
Mine wasn't oily at all. Great flavor!

I love this dressing. Nice and tangy and a little sweet. I really like it with the blue cheese and some nuts on a salad. The whole recipe is an awful lot for just one person to use before it goes bad, next time I'll try halving it. Thanks Emeril!

This recipe was amazing! I don't like sweet dressings, and most of the balsamic dressing recipes I have found turn out too sweet. I left out the sugar and let the dressing marinate in the fridge over night, and it was perfect.
