Been awhile since I had made this soup. My mouth is watering just thinking about it. Best soup ever. Thanks Emeril.

Day 2 - another recipe posted differently than what was shown on the air. If you are going to bother to post a recipe that a chef has aired to millions of people, then why wouldn't you post it correctly??
Episode - In a large pot or Dutch oven, melt butter. Add onion, carrot, and celery. Add salt and pepper. Cook until tranluscent, about 8 min. THEN add mushrooms. Add Bok Choi (ummm...no mention in the posted recipe. Add chicken broth. Add vermicelli (No chicken added to this point. and bring to simmer. Check pot to see it it needs more seasonings.THEN add chicken ("add chicken in last because it's cooked. Add it in too fast, right, and what happens, it gets all stringy on ya!!" Stir until chicken is reheated and serve.

Food Network - you are the main network that I watch. I love cooking and I love trying new recipes. However, it is very disheartening to watch a show and then find that the posted recipe is COMPLETLY different than what was shown.

I absolutely love this recipe and have made it many, many times. My variation is to use radiatore instead of vermicelli noodles. I also sometimes put in finely chopped bell peppers and I prefer cilantro to parsley. But still, a wonderful addition to my growing soup recipe collection!

    Thanks for this recipe!
