    Thanks everyone for the comments, they are always useful (especially the extra cooking tips! I made this with left over chicken for a partner who was, and it was fantastic! If follow it step by step, it's super easy. Cooking the veggies in butter before putting in the soup is the best part! I'm making it again tonight and will double the recipe to keep it for the week. Yum yum!

    I scoured dozens of chicken soup recipes before I found one that came even remotely close to the way my mother makes it - and this was a winner! I made this soup over the weekend and it was a total hit. Time consuming yes, but definitely easy if you just take your time and do it right. I did make a few modifications...I used a slightly larger chicken than the recipe called for (I love hearty soups so I let everything simmer a bit longer. I used rosemary instead of thyme because that's what I had on hand. And I added a couple cloves of smashed garlic to the stock. I left out the vermicelli - I hate when leftover soup has noodles in it and ends up a soggy mess - and just cooked up some egg noodles separately. The only complaint I have is that there simply weren't enough veggies, next time I'll probably double the amount Emeril calls for. Fantastic - this one's a keeper!

    This recipe was fantastic and so simple that my 9 year old made it the second time, with moms help of course! I did sub dried thyme for fresh because I was out but it was still as good as the first batch. I used bow ties for the pasta. Great recipe, Thanks!

    This is such a good recipe. My boyfriend was very sick and wanted some chicken noodle soup and I came across this recipe. It was so easy to make. When he tryed it he was so amazed on how good it was. I would make this over and over agian.

    My friend was under the weather and I wanted to make her some soup.
    I was looking for a chicken noodle soup recipe, Because the way I have always made it always tasted so plain. This one is so tasty! I added 1 clove of cut up garlic to the initial broth, I also used 2 cups dry, med. egg noodles, I didn't have vermicelli. I also used a little dry thyme. Thank you so much Emeril for such an Wonderfully Tasty Recipe!

    I have made several other recipes and this was by far the best. My husband was feeling under the weather and so I went searching for a new recipe for chicken noodle soup. This was great. I made it word for word and we both thought it was great. One of the best soups I've ever made. Can't wait to have the leftovers tomorrow.
