    Fantastic recipe! It is an easy recipe with a two step process that is failproof. The result was fabulous. My husband, who is a self-professed connoisseur of chicken soup, had two whole bowls full and yummed his way thru dinner! The only change I made was to add a couple of cloves of garlic to the broth stock in the first step of the recipe. I used fresh thyme and parsley from my herb garden and the smell in the house was amazing. This is now in my 'keeper- tried and true' file and I know I will use over and over again. Thank you Emeril, for yet another fabulous recipe!

    I did. I was looking for a recipe and found this one. When my husband saw what I was doing he didn't sound too convinced he even went as far as saying it was gross!I thought it was the perfect thing to do. The chicken was already cooked so it did not take long and it already had much of the flavor from the herbs It was roasted with, resulting in the perfect broth. The soup turned out delicious!And my husband well.. let's just say he had two bowls in one sitting!:

    Yummy! Made it with homemade egg noodles, and added dill and lemon. My husband is begging me to take it on our ski trip. The ultimate compliment!

    I loved this recipe! I was looking for something quick to fix for two of my daughters who were sick. This was great and my entire family loved it! Oh, and another thing, there are a total of ten people living in our house on weekends...six of which are under 12..if you can please that many people, you know it has to be really good!!!

    I really love this soup. Only adjustments I made or would recommend: I didn't have fresh thyme, so I used some dried thyme in the stock, and added a little more to the vegetables when cooking. I also added a little dried rosemary. I used egg noodles instead of the vermicelli, and I think 1/4 is a little skimpy. The last addition I made was about 1/3 cup of sherry. Awesome!

    Very flavorful, good soup! A 1/2 lb of noodles were a bit much for me so next time I will add a little less.

    This soup was simple and terrific. The chicken took about 1 hour and 30 miinutes to cook, so next time I'll use a "livelier" simmer. I refrigerated the stock over night, then skimmed the fat to cook the chopped vegetables, instead of using butter. Perfect soup to take to someone who isn't feeling well.

    What a great classic soup
    Easy to make and gone in 60 seconds!!!
    Maybe next time I will cut done on the carrots...... a bit too sweet for me.
