OMG, I have been going to a certain restaurant for years paying a pretty buck for this exact entree.
I just so happen to run across some Skate Wing in a national organic food store yesterday. It was $9.99/lb I purchased one huge piece for under $7.
After putting up some decorations I made this dish and all I can say is this is exactly the same one I have been ordering from the restaurant. I am so glad I found this recipe.
Since the piece of Skate Wing was so big I will be eating left overs.

The recipe was simple and tasted delicious!
This was my very first time cooking Skate, and I was both hesitant and skeptical throughout the cooking process. Although fresh, the skate had a stronger smell than I expected before being cooked, but afterwards the skate was sweet and tasty. The Grenoble sauce was perfect - lemony and smooth tasting. The vegetables added wonderful color and variety to the dish.
