    Huge hit at our NYE dinner, even with the picky eaters of the group. The potatoes came out creamy with a yummmy smokey flavor. I used Yukon golds. Don't need to top with anything when eating and wouldn't add a thing. I will definitley be making these again!

    I tried these for the first time after seeing Emeril prepare these on his show back in 2003. They are the best mashed potatoes, period. The smokey flavor of the gouda comes through just perfect, not too much though. I have fixed these for guests numerous times and they always rave about them. Edit note added 11/04/10: This recipe originally called for Yukon Golds. I have tried both ways and still use the Yukons. another adaptation: I peel off part of the dark brown brine on the cheese and set it aside to grate on top of the potatoes right before serving, adds an extra smoky flavor. Highly recommended!

    I almost always love Emeril's recipies, but this one is not my favorite.

    I made these exactly according to the recipe, but doubled everything for a big dinner. The smoked gouda gave the potatoes a nice smoky flavor, but overall they were just too heavy with the heavy cream, butter, and the cheese all mixed in.

    My standard recipe calls for butter and half & half and always gets rave reviews. Back to my old reliable recipe!

    I made these mashed potatoes for the first time this Christmas. They were a huge hit and were gone before I even sat down to eat. My boyfriend absolutely loved them and his taste buds are very hard to please. I make them now every so often with dinner. When I cook I usually don't measue anything so I kind of just eyeball everything and use my tastebuds and I think it still comes out great.

    I used to make Emeril's garlic mashed potatoes for Thanksgiving but when I tried this recipe two years ago, this is definitely the winner for turkey day. My son loved the garlic potatoes but now I'm not allowed to make anything but these from now on. Very easy to make. Instead of heavy cream, I used half-and-half warmed up. Also, I whip the potatoes and then fold in the smoked Gouda cheese. Everyone loves them.

    I started making this for Thanksgiving about 4 years ago and have made it every year since! My husband absolutely LOVES it and so do I! It's fairly eash to do -- but I would recommend having your grocery store grate the cheese for you because it's a hassle to do it yourself. Another comment I have -- maybe use a little less cheese than the recipe calls for. All that cheese seemed just a tad heavy for me. Overall though it's great! A wonderful recipe.
