    I had never made black eyed peas before using this recipe. It was super easy and turned out delicious! My family came over on New Years Day and raved about how good the beans were. I am going to make them again today. I served the beans with Krustez Corn Bread and some honey butter, the whole thing was super yummy,

    Easily the best black eyed pea recipe I've ever done. Perfect for New Year's Day. Out freakin' standing! I may cook it a little less next time, though, as I prefer a somewhat firmer peas.

    I hate black eyed peas. Hate. But, they're a New Year's Tradition and the rest of my family likes them, so I googled this recipe and, I have to tell ya, they were amazing! What great flavor! My husband added greens and Louisiana hot sauce to his, but I thought the recipe didn't need anything extra - it was perfect!

    One of the easiest and tastiest things I've ever made! Most of the flavor will of course come from whatever sausage is used. I added some greens and made this a "Hoppin' John" for good luck in the New Year!

    this recipe is easy and delicious. My son begins asking for it when the weather cools and can't have enough of it until I tell him it's getting too warm for this soup.
    I got it first for New Year's 2000 and have been enjoying this recipe ever since!

    Very tasty! I was concerned about other reviewer stating it was watery, so I sauteed the sausage and veggies in olive oil and added 2 T of flour before pouring in stock. Also, only used 1/2 of the broth and turned out very nice. Served over rice.

    I thought it was watery. Is this because I soaked my beans over night? I added some Cajun seasoning and 2 tlbs of tomato paste as it seemed a little bland.

    Some of the peas weren't cooked all the way through,,, I'm sure that was my fault. I'll probably soak the peas for several hours before I cook them next time. Besides that we loved the dish! I bought mild Italian sausage which added some nice flavors and I gave them a quick sear until they were nicely browned on all sides before adding the rest of the ingredients. This meal is hearty and full of flavor! And the next day leftovers were even better.

    I made this dish for yesterday for Sunday's dinner and it was delicious. My son & daughter who does NOT like black-eyed peas loved it. Thanks Emeril, you ROCK!
