This soup is fabulous. I cooked the squash cut in half with olive oil & salt & pepper, then scooped it out. I also used Uncle Ben's wild ric (90 second to make it quicker. It is still fabulous! People always want more & the recipe!

This is a wonderful soup. It is hardy, colorful and fragrant. I tried this soup just before Thanksgiving last year. The pot disappeared and I ended up making a double recipe for Thanksgiving. Not only did my family and guests enjoy a small portion during dinner, I left the pot of soup out all day and instead of people munching on Turkey during the day, I once again found my pot of soup empty! Needless to say, I am making another double pot this year! Thank you!

We served this soup at a football party yesterday (Go Bills!& everyone enjoyed it! I was really happy with the reaction to this soup. I roasted the squash the night before & used the hand blender (boat motorafter the stock was added. Also cooked the wild rice the night before. I used one can of evaporated milk instead of 1/2 & 1/2. Next time I will added a touch of cayenne pepper or hot sauce. This is a winner!!!

My family wasn't much a squash family unitl I tried this recipe. Now they eat squash nearly weekly and don't have a clue! I add roasted corn fresh off the cob (or in the dead of winter corn from our summer grilliing and that gives this an even bigger veggie punch. I would recommend this to everyone (and have!

Made this for my mom's birthday party. Even though everyone was skeptical at first, everyone ended up loving it (even my very picky fiancee. It is a different combination of food, but it tastes wonderful together. I was in a hurry at the end so I cut off about 15minutes and it was still good. I think it served more than what it said also. I will be making this one again!

This butternut squash soup is THE best tasting my family has ever had! I highly recommend it, even for the pickiest eater.

My partner loves sausage, so I thought I would try this, even though we are both trying to lose some weight. I substituted turkey kielbasa and fat free half and half for the regular versions and the soup was still delicious. I also added about a teaspoon of seven-spice for more warmth to the flavors. The fresh corn was a lovely touch and now that you can buy the squash pre-chopped, it is a cinch to make. But this recipe makes a LOT. I probably should've halved it, as I don't know how it would freeze. Tomorrow night I will add some leftover roasted chicken to it, for an even heartier dish. Great recipe, Emeril!

This is my family's favorite soup for the holidays. I already plan to make it for Christmas. It has so much flavor, it will become a family tradition.

this soup, much like a chowdeer, is delicious. the corn gives it a great texture (i made sure not to cook the soup too long after putting in the corn.
