Made this when I wanted to make something different and was overwelmed with how delicious it was. I have made it for friends and it was a big hit. Perfect soup to warm us up on a cold winter night.

This recipe is a favorite of mine, and everyone who has tried it wanted the recipe. It is fairly easy to prepare and freezes well.

This recipe was immensely tasty. I wasn't sure if my teen-age son would like it, but after he tasted it, he said in surprise that it was really good. My hubby and I also enjoyed it as well. It was a big hit and will be used again and again.

When people here Butternut Squash they say I don't like squash, well let me tell you, you will love this soup.I made it for Thankgiving dinner, and it was right up their with the turkey. The squash is the base of the soup, and you could use any meat in it. This is on my list to make again.

I thought everything about the soup was excellent - except for the smoked sausage. I might substitute smoked turkey or smoked pork next time. Because my squash were a bit small, I cut back on the liquids. I used a mixed rice combo because my family doesn't go for wild rice. (I made it separately in my rice cooker according to package. I also used frozen corn instead of fresh, which was fine.

My family all said the ingredients didn't sound all that great to them. But the combination of flavors really come together for a great soup. made it as a trail run for possible Thangsgiving dinner item, and it passed the test with flying colors. Speaking of colors, it is a beautiful orange soup. It will be on our Thanksgiving table !!!!

I love making this soup! I first saw Emeril prepare this recipe last year and have been making it every since. I usually leave out the corn kernals just because it's not always available. I have substituted pumpkin puree for the squash because I had more of it on hand and it tasted great!
