    I had this delicious soup when visiting my SIL and knew I'd be making it again. I just needed a little more thickness, so I cut back on the chicken broth by 2 cups. I also roasted seeded butternut squash halves face down on a veggie sprayed, foil-lined baking sheet while roasting something else. Then I pureed it in a food processor and used that puree when ready to make the pot of soup. (This is my plan for the future and then I can keep the squash puree in the freezer and make the soup at a moments notice! I also used a whole 1 lb. package of smoked kielbasa. The family loved it!

    I thought this recipe was great although I used a few shortcuts. I found that peeling and chopping the squash was way too hard while it was raw, so I roasted it beforehand. I also used white rice instead of wild rice (using the appropriate chicken stock ratio, and frozen corn instead of fresh. It turned out wonderful - creamy, savory, and just sweet enough.

    I made this for the first time the other night for dinner....to get out of a rut. I was pretty sure my husband would like it, he's easy to please. I was astounded though when my 3yr old put his finger in my soup, stuck it in his mouth and went "TASTY!!!" He absolutely loved it!!

    I'll definitely be making this again, it's really very simple.

    I served this as the starter for our Thanksgiving dinner, and my sister said, "You could have stopped right here." Everyone was in ecstasy. We truly enjoyed the soup better than everything else put together.

    I must admit I thought this soup sounded strange and wouldn't be good. I was wrong! It is really thick and delicious and packed with nutrients. Even better, my husband and sons loved it and it's pretty simple to make. It does require an investment of time to peel and chop the butternut squash and then roast it but boy is it worth it! Emeril, you are the best!!

    I made it with the smoked kielbasa suggestion and it was wonderful. My family could not get enough of this soup on Thanksgiving. It even outshone the turducken! We made almost all of our Thanksgiving dishes from recipes listed on the Food Network site and this was by far the best tasting Thanksgiving we have ever had! Besides Emeril's smoked sausage/butternut squash soup we made Paula Deen's turducken (I did mine completely from scratch including the boning - yikes! and her apple butter pumpkin pie, Alton Brown's Tonight Show stuffing, Dave Lieberman's tangy almond garlic string beans, a combination of Michael Chiarello's definitive mashed potatoes with a family recipe and Tyler Florence's buttermilk biscuits and a family recipe for frozen mocha-chocolate/cream cheese cake. These were great takes on traditional recipes and we loved them all! Thank you so much for the great ideas.

    I am not a big fan of butternut squash, but this receipe is absolutely delicious, my brother in law who, is a fireman and volunteered for Hurricane Katrina and was on this show, made this for Thanksgiving and everyone could not stop talking about how delicious it was and even argued to see who was going to take some home, and of course, I did not get any
