This is a great comfort soup... definitely one of my favorites! I don't always have alot of time after work to prepare such a meal but I was able to make most of the ingredients (rice, squash, & corn the night before so all I had to do was throw it all together when I got home. This only required about 30 minutes of cook time to complete the soup! I like to add a little bit of curry powder to the soup as well. I love how curry compliments the squash flavor and gives the soup a little kick. Not too much though!

I've been making this for Thanksgiving for about 3 years now as well as several times in between. This soup is delicious. Even my super-picky kids eats this up. I don't put the corn in and on a couple occasions I've used the Safeway Deli prepared Butternut Squash soup and add the additional ingredients. Either way, its positively phenomenal.

This is delicious!! I was lazy. So, I just cooked and pureed the squash. Next, I sauteed the onions. Then I threw everything into a crock pot. Easy and quick for Thanksgiving.

This will be my 4th year to make this soup for Thanksgiving. My dad has requested it since the first time I made it. He doesn't care about turkey and dressing just the soup. It is super yummy!

This is probably my favorite soup... ever. It's so delicious. The first time I made it with a ground italian sausage (What I happened to have in the fridge & added some smoked paprika. I have made it several times now, and people seem to love it. Emeril, you never let me down! Thanks!

I thought the recipe I originally used for Butternut Squash Soup was superior until I came across this one. This is THE best soup I've ever made. The only modification I made was that I couldn't find the rice that the soup requires at my local supermarket (I wasn't about to go searching all over town for rice so I used a boxed Zatarans that didn't have much seasoning because I didn't want to compromise the flavor of this soup.
This is my go-to recipe for a comforting meal on a cold, rainy day.

I make this often with turkey kielbasa and usually leave out the half and half. It is really excellent and so nice to have a less sweet and more smokey and savory squash soup. My 2-year-old even loves it.

This is one of the best soups I've had! It was cold and snowy here today and I wanted a warm, hearty, comfort soup. It was creamy and delicious with a great hint of smokiness! I did use heavy whipping cream instead of half and half to get it a little creamier. I totally recommend this!

I've made this soup a few times with some variations. Ground Italian sausage is a good substitute for the smoked sausage, and coconut milk in place of the half and half is divine! I once left out the corn accidentally and liked the flavor even better.
