I smoke a lot of meat, and when I do, I often add turkey legs in the smoker. When I saw this episode, I thought this would be great, because I love to cook gumbo. I followed the recipe closely, and absolutely loved it! And as a bonus, I now put smoked turkey legs into my white chili, and cook it like the gumbo. Take the meat off after it's falling off the bone,add it back in, and a wonderful other way to use smoked legs!

The thing I liked best about this gumbo was that it didn't have okra. Besides that, it just tasted great. I may slightly decrease the amount of meat that I use. I also left out the beer and it tasted just fine.

An interesting dish, but it can not be truly called "Gumbo", because it has no gumbo (okra in it!
From http://plantanswers.tamu.edu/publications/vegetabletravelers/okra.html we learn...
"0kra (Hibiscus esculentus is also called "gumbo" in this country, although the latter term is more often applied to soups or other dishes which contain okra. Both of these names are of African origin. "Gumbo" is believed to be a corruption of a Portuguese corruption, quingombo, of the word quillobo, native name for the plant in the Congo and Angola area of Africa."
I, for one, am astounded that any Cajun chef would overlook the one required ingredient to call a dish "Gumbo".
Entertaining show, albeit inaccurate.
