The BEST greens I've ever made and tasted! This recipe is fantastic and was easy to follow. This will be a family favorite and will be part of my Thanksgiving recipes. Thank you Emeril for such a delicious recipe!

If you make the rue first the greens will be greasy. To eliminate the greens being very greasy, cook the onions and celery first, then add the flour to make the gravy. This way the flavor is wonderful and there won't be a greasy bunch of greens.
