I followed a few of the suggestions, and added 1 tsp vanilla with the eggs and 1/4 tsp nutmeg to the cinnamon and sugar. Can you say YUMMMMMM?? These are SO GOOD!!

Emeril, Thank you for sharing your recipe. I followed your recipe and added 1 tsp vanilla extract and 1/4 tsp of nutmeg as suggested by other postings. This dough recipe makes a well balanced cookie, soft yet not overly soft, full of flavor! Be sure to leave ample space between your cookies on your baking sheet. I will use this recipe for all my Snickerdoodle baking!

These were great. Sending them to work with my hubby so that I won't eat them all. These taste great!!!!! I did add 1/4 teaspoon of vanilla like the other reviewers. They taste exactly like the ones from American Cookie Company. Five Stars!!

Delicious cookies! They look as great as they taste too! I didn't have any shortening so I substituted 1/4 c butter & 1/4 c cinnamon apple sauce, and they tasted a little apple-y so I called them apple cinnamon cookies. They were a hit!

I am not a baker, but I needed to whip up something quick for my daughter's school bake sale and tried this recipe. They came out awesome! Large, beautiful cookies with crispy edges and chewy middle. I took one of the other reviewer's recommendations and added a little vanilla extract and a pinch of nutmeg. They were soooo tasty! An easy last minute go to recipe! Thanks Emeril
