    I made this a while back but am just now getting around to the review. My whole family enjoyed this. The reason I did not give it five stars is because the recipe for the greens I did not enjoy. They turned out entirely too sweet but in reviewing a recipe I always make as is the first time in order to be fair. The next time I make this and I will be making it again I will make the greens the way I normally make them. I will say if you are looking for a recipe that will wow family and friends this is the one!

    You can skip one of the most time consuming steps in this recipe by doing this:
    Soak a 16 ounce package of small red beans in water over night. In the morning, drain and rinse the beans. In a food processor blend up 3 andoille sausages or I prefer Johnsonville New Orleans Style sausages. To a pressure cooker add the beans, the ground up sausages, 5 cups of unsalted vegetable stock, and two tablespoons of Emerils seasoning. The recipe for his seasoning is on this sight, but you MUST leave out the salt so you can control the salt in your beans. Cook the beans on high pressure for 25-30 minutes so the beans get mushy. Cook the white rice with several shakes of Louisiana Hot Sauce. Done baby! And these will be the best red beans and rice you've ever eaten. Salt after cooking so the beans don't become tough.

    I made this yesterday, everyone loved it - including our 5-year old granddaughter who had never tried greens before! She cleaned her plate and we didn't have to keep telling her how many bites she needed to take to be finished. I kept hearing, "This is the best dinner I've had in a long time" and "You need to make this again"!

    This was the best red beans and rice I have ever had. I was worried at first because I thought it had to many flavors going on. But once I completed the meal I must say I couldn't believe the taste. My husband and 16 year old son loved it. I will make this again as a special treat. I would just like to make a suggestion and that is make sure you have plenty of time because it is definitely a meal that can't be rushed. However it is while worth the time and effort.

    I followed the recipe to a T. Everything came out Wonderful. The flavors and presentation were outstanding. It just took toooo long for me to put all together. Too many things needed to be done at the same time but now that I have done it once maybe it will be easier next time. Yummy Yummy!
