    I left out the bacon, which I'm sure would have made them even better, but I really liked these. The onion/beer/rice vinegar flavor was great. I used a porter & it went with the greens really well. This will be my go-to greens recipe!

    EXCELLENT! The type of beer you use will for sure control the flavor. I used a very Hoppy beer which gave a very strong flavor that really stood up great to the strong flavor of the collards ;-D I think these are amazing and my husband loved them as well. Made for a group and they raved about it! Will be making these as my new go to recipe. Thanks Emeril!

    This was probably the best collard greens I have had, including restaurants. I think the beer really did it. I just used a bottle pale ale beer from my fridge. Used 6 bunches of greens, cut off the hard stems, rolled the leaves together then cut it in 1" strips. It needs to cook for a long time. I added a little more molasses than called for. I love Emeril's recipes!

    Well, it started off with a bunch of collard greens I received from my local food co-op- I had only eaten collard or mustard greens once of twice in my life- so I set into cookin'...then came the skillet corn bread...then came the mac 'n cheese (emeril style of course, lastly the baked acorn squash and it was ALL SOOOOO GOOD!!! Without the collards, which were delish, I would have never branched out and made this southen style meal.

    I've gotten requests to make this dish at the holidays for the last 2 years. I used regular cider vinegar and it was still great.

    enjoyed this recipe for greens.it sounded strange with the beer but the flaver was good and the greens were very tender.thanks for the recipe emeril
