    Very good! Could have been a meal in itself. Didn't need to be cooked for an hour, checked it at 45 minutes, then uncovered and let the rest of the water boil out. Also used Lawry's Season Salt and some garlic powder.

    This is a great traditional recipe. My tweaks are that I use Lawry's Seasoned Salt and chicken stock instead of water. When I use a LeCreuset dutch oven, the heat is distributed better and it only takes 30 mins. It takes longer in an aluminum pot, or one with a copper bottom.

    My Grandmother has cooked her green beans in a similar fashion for years! I LOVE this recipe. It reminds me of my childhood in South Texas and is a great way to use those garden-fresh green beans

    I made this recipe with baby french style green beans, so I did not add them until the potatoes were 1/2 done. Total cooking time once potatoes were added was 40 minutes - tender potatoes and great bean texture. And I used chicken broth instead of water for the initial covering of ingredients, then went with water as suggested, just for the added flavor. My husband is NOT a veggie eater and he LOVED these!

    It's easy, quick and great! It's southern style green beans and it's supposed to be overcooked!!! (I admit that I hated overcooked veggies when I first moved down to south YUMMY!

    This is an easy, no-fuss vegetable dish and the bacon certainly adds a lot of flavor to the vegetables. I only cooked mine for 30 minutes, and the vegetables were still a little overdone. I'm not sure I will make it again, as if was just okay, but nothing special.

    I have been trying for years to duplicate my belated grandmother's green beans. She had no written recipes. She just knew what to do. Emeril's recipe is so good it taste like grandma send these beans down from heaven. The only think I did different than Emeril was cook them about 1 hour longer.

    This was very good and pleased my family. I'm handicap and it didn't require standing over the stove for long periods of time. that's a PLUS for me.
