I love,love,love this one. I don't know why everyone say's the spice's are to much. I did just like it said. I did cook it for 2 hour's instead on a simmer. I love the taste maybe it's b/c i'm part Italian and I grew up with the taste. thanx for sharing

The cinnamon was too over powering for me. Next time I will leave it out and increase the oregano and thyme a little.

I never had or made a bolognese. I was having guests for dinner and wanted to make something relatively quick and easy. The spaghetti sauce I make is really good, but wanted something different. This recipe did the trick. I was a bit hesitant on using cinnamon and nutmeg as ingredients (and read how some reviewers said the spices were "overpowering". I followed the directions explicitly and ended up with a sauce for the ages. The cinnamon and nutmeg is what makes the bolognese shine. The flavors were exquisite, the meat perfectly blended with the sauce and the vegetables gave it a nice texture. This recipe was simply wonderful. Highly recommend it, hands down!

I think next time I'll leave out the cinnamon and nutmeg, and add more garlic.

W.O.W really good. Bursting with flavor. I have had Bolognese before that was good but this recipe is superb. I didn't change a thing and I don't think anyone should either and then give a review that it didn't taste right. If you're going to make a recipe, follow it to a T first and THEN comment on how good or bad it was. Erghhh. Also, for the reviews complaining about the cinnamon, etc. It's 1/2 tsp?! Not a TBS. it's there to enhance the sauce and that it does. I will definitely make this again and again. Excellent!

As reviewer "rjrisco" said below, "Don't be afraid of the cinnamon and nutmeg". It is these ingredients that make this recipe so special. The only thing I didn't add was the salt as I think Emeril's recipes tend to be a bit salty for my palate. Next time I make this, I will double the recipe as I will want to freeze the excess for last minute meals.

This was the best sauce I have ever made!! I followed the recipe exactly - and it turned out Fantastic! Really elevates "spaghetti" night!! Amazing flavor - so Delicious! I will be using this one for entertaining for sure!

This sauce is amazing. I've tried several other bolognese recipes and this one is the best by far.
I agree with other reviewers who suggest halving or omitting the cinnamon and nutmeg. It was a little too sweet for my taste.

Turned out great but I did only use 1/2 the amounts of cinnamon and nutmeg and felt the flavors were strong enough. Very hearty sauce and tasted great!
