    The recipe was fabulous! It was relatively simple to make, and tasted like something you'd get from a restaurant. The only minor change I made was the addition of olive oil- and I took most of the fat off of the bacon before I started frying it. Definitely making this again!

    I and my family enjoyed this dish quite a bit. Even my sister, who claims to hate squash, was sad when the leftovers ran out. To make the dish more interesting and colorful, I sauteed mushrooms, onions, and red bell pepper and added in peas and chopped turkey at the end. However, adding these extras also meant I had to make more sauce.

    I've never had "real" carbonara, but this squash one is delicious!

    I made this for the first time tonight and it was delicious! I used a smaller spaghetti squash so I should have cut down the cook time to 45 minutes. I also didn't have a shallot so I substituted the white part of a few green onions. I was worried my white dessert wine might be too sweet but it turned out perfect. I used it as a side dish for my salmon and broccoli. I don't think I would use as a main dish because it wouldn't be enough.

    I will definitely keep this recipe. Very satisfying. I used smoked peppered bacon and followed the recipe as it said. It came out perfect. It was great the next day too.

    Delicious! Made even easier/quicker by microwaving the squash. I didn't have pancetta, shallots or the right cheese, so used bacon, white onion and the grated parmesan cheese that comes in the plastic shaker bottle by Kraft foods! It was really easy and tasted good. We grew our own squash so that was even more wonderful.

    Oh mercy! I had never tried Carbonara until our visit to Rome this last Spring Break. It was instantly one of my favorite meals of all time. Since then, I have tried every recipe I can get my hands on and, even with squash, this is one of my favorites! I do try to avoid pasta and eat spaghetti squash as a substitute, so this fit my needs perfectly. My 7-year-old adored it and requested that I put the leftovers in her lunch! The only alteration I made to the recipe was to cook the squash in the mircowave (which only takes about 10 minutes instead of the oven.

    This was a hit in our house--even my non-vegetable eater husband enjoyed it. I will say, though, that we modified it slightly and left out the bacon---I know you may think it would lack flavor, but it didn't. We served it with shrimp. Delicious!
