    Super easy and delicious. Will definitely make this again. Served it with garlic grilled shrimp for a healthy and filling dinner.

    I made this recipe with garlic and olive oil. This is the first time we have ever had spaghetti squash. This was absolutley delicious. I am om Weight Watchers and this is a perfect alternative to pasta!! Next week, I am making it with my homemade sauce!!

    The flavor in this dish was definitely AMAZINGLY GOOD--but--I can't believe no one has mentioned how SALTY it is. I cut the salt down to 1 teaspoon total instead of 2 and with the salty bacon and salty cheese I still found it to be too salty. Aside from that, the recipe would be wonderful with no added salt. I saved the leftovers and will try tossing it with some wholewheat pasta to tone it down.

    This recipe is AMAZING! This was my first time preparing and eating spaghetti squash. The dish was relatively easy to make and is packed with flavor! What a great alternative to pasta! I made a few adjustments... I didn't have shallots so I substituted onion, I only used 4oz of pancetta (all I had in refrigerator, and used a mix of freshly grated Asiago and Romano cheeses. AND the dish turned out delicious! It was served as a side dish. There was plenty of pancetta and flavor from the variety of cheeses. Will definitely make this dish again!

    The recipe was fabulous! It was relatively simple to make, and tasted like something you'd get from a restaurant. The only minor change I made was the addition of olive oil- and I took most of the fat off of the bacon before I started frying it. Definitely making this again!

    I and my family enjoyed this dish quite a bit. Even my sister, who claims to hate squash, was sad when the leftovers ran out. To make the dish more interesting and colorful, I sauteed mushrooms, onions, and red bell pepper and added in peas and chopped turkey at the end. However, adding these extras also meant I had to make more sauce.

    I've never had "real" carbonara, but this squash one is delicious!

    I made this for the first time tonight and it was delicious! I used a smaller spaghetti squash so I should have cut down the cook time to 45 minutes. I also didn't have a shallot so I substituted the white part of a few green onions. I was worried my white dessert wine might be too sweet but it turned out perfect. I used it as a side dish for my salmon and broccoli. I don't think I would use as a main dish because it wouldn't be enough.
