This tastes great and is great for people who can't or won't eat pasta. But, just don't get any ideas about it being all that much lighter or healthier than the original. It was easy enough to make as well, although it does take a while to cook the squash in the oven.

I made this for Sunday brunch and it turned out wonderful. Will make again and again. The only thing I did different was roast my squash first with evoo and omitted the water. Very tasty dish... thanks Emeril

I used maple bacon to add a little more warmth to the dish. Delicious. Very different than anything I've tried before.
