    These were wonderful! They are a little sweet and and end with a kick. Next time I think I will add a little more cayenne and ground chipotle chile for a little more heat.

    Absolutely love this recipe.
    Used the parchment paper and didn't seem to have any issues.
    Neat tip for serving them as a appetizer is to put portions in shot glasses. My husband and his friends loved them while watching the hockey game.

    For variation, try substituting other spices in lieu of the cayenne:

    1/2 tsp. cocoa powder + 1/4 tsp. chipotle pepper
    1/4 tsp. garam masala + 1/4 tsp. cayenne
    1/4 tsp ginger + 1/4 tsp. cayenne

    Be creative!

    I've tried several versions of these. My preference so far is 1/3 c. sugar, 2+ T. Essence, 1 t. cayenne and a good sprinkle of salt. Sweet and spicy!

    My only suggestion to save you major aggravation is to skip the %$##@! parchment! Because of the egg and sugar, these bad boys get very sticky in the process of baking and trying to "stir", i.e., unstick them from one another and the pan a few times in the process is quite a frustrating chore. Just put 'em on the plain ole baking sheet and soak it overnight when all is said and done for an easy clean-up.

    The first time I made these nuts I thought they were great, but I wanted a little more heat. So when I made them again, I added a little sriracha hot sauce to the nuts before baking. Now whenever I have an event at my house everyone wants to know if I'm making them. The more you make, the faster they disappear.
