I make these for my husband at least once a month. THey are very easy to make and he says they taste fantastic. I just made them for my Sugar Bowl party (go Mountaineers! and they were a HUGE hit with my fellow WVU fans.

Fairly elegant with the right amount of fire. A bit rich so a little goes a long way.

These are fantastic! I have made these several times for appetizers and they are always the most popular thing at the party. The crab mixture tastes great as a hot appetizer dip too.

The only change I made was to use habanero peppers. I only used one. The hot sauce I used was Tabasco chipotle. WOW!!! They were GREAT!!!

I made this for a party recently. I followed the recipe as indicated prior to the party and had several people tasted it for me, unfortunately it wasn't very appetizing. So I was forced to tweak it a little bit by adding cilantro, chopped scallions, bread crumbs, lemon juice and cayenne pepper. It was very well received after the fact.

In fairness, I never had it before and I do not have a reference on how it's supposed to taste but the guests loved it so I must have done right. The mushroom when hot is a wee bit mushy though, so cooling it off a bit gives it a little crunchy taste.

Another wonderful way to use our local Maryland crabmeat. I will make these again, they are definetly company fare. Used large white mushrooms and served with a salad. My husband raved. Way to go Emeril

I thought these were great and so did my guests. I would take the advice of previous reviewers and limit the jalepenos if you want them to be a little milder. They are extremely spicy, but delicious. I'll have to try the idea of sausage too. Yum.
