    This is absolutely DELICIOUS!!!! It's a little labor intensive but well worth the effort as the end result is incredible. This is just a taste preference, but I added some sugar to the sauce which cut the tomato effect just a lil bit. I've got some left over sauce that will pair up well with pasta. Good eats!!!

    This is amazing. I've never enjoyed eggplant much but this is AWSOME!!! It takes time but is well worth the effort. Give yourself time before company comes, takes about 5 hours from start to finnish, but I didn't allow myself enough time to prepare the eggplant. 5 Stars, the first and only "rating" I have taken the time to do.

    I thought this dish was a long process to make but the end product was very enjoyable. My husband really loved it. I never liked eggplant before today. Thank Emeril.
