Ok, I guess my family's palates do not have finesse or something, we enjoyed the pork stir fry, but not the jasmine coconut rice. I would make it again with regular rice. The pork was fork tender though.

Best pork stir fry recipe I've tried to date. Even the husband loved it and he isn't the biggest stir fry fan. Definitely will keep this in the family recipe book! Only used half the jalepenos that were called for. It was hot enough for us.

I had some leftover pork so I needed to cook it before it went to waste and I found this recipe. This dish is very good! . Eggplant tends to absorb a lot of oil so I microwaved my eggplant first to cook it before putting it on the pan. I added one less red jalepeno bc i was afraid it would be too spicy and it was perfect! This is a great dish especially for ppl who love eggplant!

I didn't have any red jalapenos so I only used the two green ones, which I seeded - I have young children who don't like things too spicy. Even though there was no heat from the jalapenos they gave a lot of flavor. I don't have a wok either, but the recipe still came out really good just using a regular pan. I'm what you would call "rice impaired", as well - making rice is hit or miss with me a lot of the time. However, this rice recipe was really easy and it turned out perfectly. My family loved this meal and it will definitely become one of our regulars.

I normally don't follow a receipe to a T! I only used 1 jalapeno and I took the seeds out! Also I used low sodium soy sauce and added snow peas to the receipe! I also made fried rice instead of coconut rice! My family was asking for seconds!!

This recipe can not be correct. It calls for 4 jalapenos. I normally follow a recipe as shown the first time I try it. This was a collosal mistake as it was so hot wife couldn't even eat it. Flavor was good but the overwhelming heat spoiled the meal. 2 Jalapenos would certainly be plenty even if you like it hot
