This soup is so easy to make, yet develops some great flavors. I served this to some foodie friends who came over for dinner as an appetizer, and it was definitely a hit!

This soup is the best I ever had!!! Delicious I guess maybe so. I had set up a recipe box at home and called it tried and true. I try recipes and if they make the cut they go in this box under that particulaar chef. This one I labeled BLUE RIBBON!!!!!!!!!!!!!!!!

I love Thai coconut-based soups so I personally was excited to try this one. I wasn't so excited to hear the whining from my family but to my great suprise, they all loved it!!! To feed more people I doubled to shrimp stock (made with the shrimp and lobster tail peelings! and added a bit extra shrimp.
