I made this dip 4 times already! It's very easy to make, full of flavor and so creamy. It was a hit every time. So So Good!!!

It was O.K. When I saw the near perfect review I guess I was expecting something different. I was looking for something near Houlihans' spin dip. I got compliments, and people actually took it home. I guess if you never had Houlihans' spin dip, then it probably is pretty good. Just my $0.02

This was just ok in my opinion. Given the amount of interesting ingredients, I expected better. The general concensus was that the bacon gave it an unwelcome meaty flavor, and that it was way too "creamy" and bland! Will not make this again.

I made this for a baby shower last weekend and everyone loved it -- should have made a double recipe to have leftovers! I did make a few changes, just based on what I had on hand: I also used frozen spinach and only used about 2/3 of the 10 oz package. I didn't have any cayenne, I used 1/2 and 1/2 instead of milk and cream, and I used swiss and mozzarella cheese instead of brie and monterey jack. I really think you could use ANY good cheese that you happen to have on hand ... brie, gruyere, even feta. I will keep this recipe forever!

    Absolutely FANTASTIC recipe.

I added frank's red hot instead of the cayenne and some cooked chicken and it became buffalo chicken dip! So yummy- a great recipe from emeril

Really good! I made this last night for a family birthday party and everyone loved it. The bacon makes it over the top! I have to admit - it takes longer to make than the time given - and I'm a really organized cook! Also, make sure you have a shallow baking dish or it takes a long time in the oven.

I've wanted to make my own Spinach and Artichoke Dip forever......and Emeril, you made it happen....thanks Food Network......My company loved it and we did too.....I used frozen chopped spinach instead, along with an extra sprinkle of Cayenne pepper and garlic powder besides using fresh garlic. I also mixed in a little parmesan cheese in the dip besides putting it on top. Great flavor...awesome dip

Made this today for company and everyone loved it. I halved the receipe (perfect for 4 people and used a 10 oz. box of frozen spinach (thawed and squeezed dry and added a litle more cayenne. Served with homemade pita chips. Will definately make again.

I now know why most reviewers have rated this "five star" -- this is the best dip I've ever made! I substituted forzen spinach and can only image how it will taste with fresh spinach. The receipe makes a large appetizer. Enjoy!
