    I've been looking for a great recipe for empanada dough, and Emeril has not failed me! This was DELICIOUS! I actually didn't have time to bake them off, so after I filled and shaped the empanadas, I froze them on a baking sheet. I added some 5-7min to the baking time. The empanadas were flaky and tender, and my whole family loved it. As other reviewers have noted, once you have this empanada dough recipe, the possibilites for fillings are ENDLESS! On a side note, I was only able to make 6 empanadas, versus the 10-12 stated in the recicpe. Maybe I needed to roll the dough out even thinner. Regardless, fantastic recipe!

    I made these empanadas today and served them as a side dish for our dinner. They are delicious, This was a really easy recipe to prepare and I loved the dough. They were a wonderful addition to our Sunday meal and my family enjoyed them very much. I served Labne yogurt as a condiment to go along with them. The dough will be great to make for other fillings for sure. The dough is so tender and bakes so beautifully. They really are picture perfect when they are done baking. Thanks Emeril for another delicious recipe.

    I found this recipe easy to make even though it is rated intermediate. When it came out of the oven it was picture perfect. The filling is delicious and the crust is something else. I cannot wait to use the dough with other fillings, for example, pepperoni and provolone or possibly shredded pork. Excellent recipe, Emeril!
