Ingredients
- 1/2 cup buttermilk
- 1 tablespoon fresh lemon juice
- 1 tablespoon olive oil
- 1 tablespoon minced shallots
- 1 tablespoon minced fresh dill
- 1 tablespoon minced fresh parsley
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 pound fresh baby spinach, rinsed well, dried and stems removed
- 1 (14 1/2 ounce) can hearts of palm, cut crosswise into 1/2-inch rings
- 2 mandarin oranges, peeled and segmented
- 1/3 cup pine nuts, lightly toasted
Directions
In a bowl whisk together the buttermilk, lemon juice and oil. Add the shallots, dill, parsley, salt, and pepper, and mix well. In a large salad bowl, combine the baby spinach and hearts of palm. Toss with the dressing to taste, and divide the greens among 6 salad plates. Decoratively arrange the orange segments on each salad, and top with the toasted pine nuts. Drizzle additional dressing, if desired. Serve.

We loved the basic ingredients of the salad and would make that again.
However, we felt that the salad needed a more substantial dressing. We loved the herbs used, so will experiment with other ingredients to make it more substantial.

I used this recipe for the dressing only and instead of using it all at once, I used it as needed for three days. I also used romaine lettuce instead of spinach as the recipe called for, and it was delicious. Buttermilk is very low fat since it is made from non-fat milk and fermente, so it is healthy choice also. The dressing tasted very fresh with the dill in it. Be warned, since this recipe calls for only buttermilk and no thickener, it is runny. You could add some sour cream or heavy whipping cream, but that would make it a lot less healthy. I thought it was great the way it was, and could be used for any salad. Would go great with seafood also.

My family and friends really enjoy this salad. The dressing is light yet tangy and the oranges and hearts of palm are great compliments to this dressing. I recommend trying this yummy and colorful salad.
