I made this dish for Thanksgiving this year instead of our traditional stuffed artichokes and it was just out of this world. Everyone loved it and has requested the recipe. I may sound crazy but It's sooo good that I don't want to share the recipe with anyone!

This was definitely better the next day. I even froze it, and it was still good. Pretty simple to make, though I thought the artichokes gave it a bitter flavor, maybe I just need to rinse off the salt water better next time. It was a hit with all of my non vegetarian friends, very hearty!

I missed this program, only to see Emeril serving this dish. So I think I missed a few "tricks". I will try making this again and changing how I mix the ingredients together as the spinach, artichoke, cheese misture was hard to get thoroughly mixed. Recipe called for cutting artichoke hearts in quarters -- I might cut them a little smaller.
