Spinach Pasta Dough

In the bowl of a food processor, combine the flour, salt and blanched spinach. Process to mix well. With the machine running, add the eggs, egg yolks, and olive oil through the feed tube, and process until it resembles wet cornmeal, about 2 minutes.

Take a handful of dough at a time and form into a firm ball. Repeat with the remaining dough. Roll out each dough ball into desired shape in a pasta machine according to the manufacturer's instructions.

Bring a pot of salted water to the boil and cook the pasta until just al dente, about 2 minutes. Drain in a colander and serve with desired sauce.

    I used this to make spinach and kale ravioli. A-MAZING! I used right around 3 cups of flour since i dont have a kitchen scale and it really came out great. Very tasty and tender! My go to recipe for pasta...Thanks Emeril!
    One of the best tasting I've ever had. This is better that most restaurants can make. The pasta was light and flavorful. Extremely easy to make.

    Great idea to do with the kids. About to start my second batch on this snowy day. Got a bag or organic spinach from my CSA and away we go!
    I found I could easily add my whole 10 oz. package of organic spinach, and the result was heavenly. I did need to add about 2 T. of water to the machine while running to get the dough to form correctly. Once it did, the dough was incredibly easy to work with and tastes great.
