    This was very tasty! I followed the advice of another reviewer and cooked 2 strips of chopped bacon until crispy, reserving about 1 tsp of bacon fat, then added the reserved bacon bits at the end. The figs make a wonderful pan sauce to accompany the spinach.

    And as any regular viewer of Emeril Live knows, Chef Lagasse often speaks proudly of his hometown of Fall River, MA.

    To make it the best spinach I ever had, cook some bacon in the pan first. When it's cooked through, remove it from the pan, get rid of excess bacon grease, leaving just enough to add flavor, and add the bacon crumbles to the finished product. Unbelievable.

    I am not a fan of Emeril* but occasionally I will try his recipes. This recipe for sauteed spinach is good, as my family enjoyed it. I couldn't find dry figs, so I used fresh figs and the result was outstanding. It takes relatively little time and is plate side in five minutes. Serve with a good cut of beef and you have a winning foundation for a meal.

    *I don?t care for Emeril because he is a native New Englander who claims to be from Louisiana. He has also been caught taking credit for others recipes, down to the smallest detail; like the infamous cooking magazine recipe from the mid-1970?s that he copied 100 percent, word for word.

    I'm sorry, but I'm not Emeril's biggest fan... HOWEVER, this was very good. The figs added great texture and the honey just gave it a hint of sweet. It was a great way to spice up simple spinach. I loved it.

    This recipe was easy and delicious. The honey was something I never expected to like on spinach but the flavor against the garlic was awesome. This recipe will now be a staple in my house.

    I never liked spinach before. I cooked this recipe and it was absolutely delicious. I didn't have the figs on hand though. It was easy to cook even for a kitchen tyro like myself. It's a stable for me from now on.
