    My family of athletes (college and pro football players an cyclists loved this cut of meat served with cheesey herb popovers! A new tradition for our Chistmas meal menus from now on.

    I made this recipe for the first time for Christmas and it was a huge success! Absolutely everyone loved it and wanted seconds. I would highly recommend it. Don't be afraid. It was so easy!

    No one should prepare this expensive cut of meat without using and knowing the final oven / cut temperature. This omission is inexcusable from a professional chef.

    Made this for X-mas dinner this year using a 4 bone-in, 8lb roast and it was perfect. Fed family of 7 with sufficient leftovers, and everyone stuffed themselves. The rub of roasted garlic paste, rosemary, and tyme turned into an awesome crust and put off great aromatics in the house all afternoon. (don't skimp out and not use fresh herbs I ate it an hour ago and can still taste it. The beef was perfectly tender and got awesome reviews... a definite recommendation.

    This is a very simple recipe to follow, but yet the results are so good. I first tried this recipe back in 2004 and I've made it at least half a dozen times since then. I've made it for friends and family including my inlaws. It's a great dish for any get together. The best part of this dish is your not standing in front of the stove all day long.

    Prepared this for dinner tonight. Let's
    just say there wasn't much conversation
