Ingredients

  • 1 teaspoon olive oil
  • 2 shallots, sliced thin
  • Salt and freshly ground pepper
  • 1 pound haricots verts, cleaned
  • 1/4 cup water

Directions

Heat a large saute pan. When the saute pan is hot, add the olive oil. Add the shallots and saute until soft, about 3 or 4 minutes. Season with salt and pepper. Add the green beans and saute for 2 minutes. Add the water. Cook for 4 more minutes, or until beans are al dente. Season with salt and pepper.

    This is so good and requires only one pan! I caramelize my shallots (if I don't have shallots I use a small amount of onion thinly sliced and add 1-2 cloves of garlic finely minced when the onions are brown. I saute for another minute or so until the garlic is fragrant. A really great recipe that always gets me tons of compliments when I make it! Emeril is the man!!!

    This a great side dish and is so simple to make. I made it for Thanksgiving and now Christmas Dinner. To ease preparation I used the trimmed and bagged green beans from my grocer. YUMMY!
