Delish! Must use the country ham for best flavor. I didn't change a thing and even my 5 year old ate it. Did not add any salt or pepper, it didn't need it.

Pretty good. It is worth making for New Years but I can't say I would keep it in my regular recipe box. Good flavor but not a head turner. I gave it four stars because it is pretty hard to find a good black-eyed peas soup recipe. The ham is a great addition to the soup.

I made these for our New Years dinner and they were fantastic. Everyone loved them - from the youngest of our family at age 4 to the oldest at age 88. My husband even praised the taste and he doesn't drop compliments lightly.

Delicious!!!! I only had access to one grocery store and it was by foot, they were out of regular beans so I had to buy cans, and they had no country ham so I used the other half of the bacon that I used for my NYE cabbage. STILL DELICIOUS, even with me F#$*&ing up the recipe!

After searching the net for a recipe that looked interesting and tasty for my first-time working with black eyed peas, I chose this one over many others. Though I'm certain it would have been delicious as written, my penchant for improvisation led me to tweak it somewhat as I used diced salt belly pork instead of country ham, added about two cups of potatoes, two diced green bell peppers, and also two 14.5 oz cans of fire-roasted diced tomatoes.
Once I sauteed the vegetables and meat, I added the liquid, brought it to a boil and transferred everything to a crockpot where I then cooked it on high for about 2 1/2 hours. The result was fantastic and very well-received.

Made these for New Years and for the first time my husband got a second helping. I also used a ham hock, browned slightly before adding the onion. I added some Louisiana hot sauce for a little spice and found they were delicious. Will definately make again and again!

This was the first time for me to make blackeyed peas for the New Year. I had made a ham for Christmas and had ham left over so I just used it for this recipe as well. I followed the recipe exactly as it states and all I added at the end was a little Tonys creole seasoning to give it a little bit of spice. I do not like things very spicy where as my husband does, so this made it that much more perfect. I will keep this recipe and use it for years to come. Thanks Emeril!

The best black eyed peas I have ever tasted!! Full of flavor! Soaked peas for 6 hours & threw all the ingredients in a crock pot minus the water. Also used ham hock instead of ham. Cooked on low for 8 hours. This recipe is definitely a keeper!!
