    My son grew up with a friend who's family was from the house. His friends
    grandmother always made blackeyed peas
    and corn bread. I made this today for our Sunday family get-to-gether. I made
    cornbread also. My son gave 2 thumbs up. He said it tasted just like he remembers. Thanks Emeril

    I wanted to find a new recipe for our New Years black-eyed peas dinner. This kept to the traditional black-eyed peas and ham, but added a few spices that made it a bit different yet delectable. The fresh thyme and basil added a great flavor to this dish.

    I like my peas a bit softer so I cooked them about twenty mins longer than the recipe suggests. The suggested time made the peas a bit al dente, which makes them have more of a bold 'pea' flavor. I like my peas to be really soft in the middle, to have a good, but not predominant flavor. I like to taste the flavors of the spices and seasoning as well.

    Dear Yummy, but.....

    I plan on making this dish for New Year's too. I didn't see the episode, but I think the pickled port meat is something like the pickled pig's feet you can buy in a jar.

    Myself, I think I'll skip that part. The smoked ham hocks should to the trick. I also like to use smoked turkey wings in place of hocks sometimes. I think the smoke flavor is a lot stronger, but there is less meat.

    This recipe was just terrific. I always add some things to recipes to make it my own, but this recipe I would recommend.
