    The taste was good. Unique. Not like something we'd normally have. I left the bacon out. but put in a splash of tabasco chipotle sauce. I also used dried thyme. My son gave it an "8"; he thought it would be better with the bacon. I found it to be a little greasy, even without the bacon. I definitely agree that this would best be made in a larger pan. In the end, it turned out to be not "stewed butternut squash", but "butternut squash stew".

    Everybody loved it! I think it was a great substitute for the normal vegetable side dishes (green beans, broccoli, etc., but probably will remain a dish served just a few times a year. We served it with Sandra Lee's brined pork chops and all of the flavors worked really well together! I also cut back on the stock by 1 cup and added just about the full amount of maple syrup and it turned out perfectly! Definitely needs to be cooked in a large pan, not a medium one.

    I found these wonderful chicken apple sausage which I browned and kept separate until the end. Also, I added 2 apples and 1 lg sweet potato. I kept syrup the same as listed but was careful with adding the salt. Perfecto! I will make again.....

    I followed this recipe and made the adjustments by noted previous reviewers. The apples and squash came out like mush. Definately doesn't need to cook this long. Simmer everything in a covered pot for 15 minutes and that should be fine. What a Christmas disaster!

    Took some attention to cook...but well worth it! My very traditional family LOVED it!

    With a big Christmas feast to prepare I just stuck a willing (or not so willing family member to stir - time - add - etc.

    I wouldn't change a thing!

    Agree with other reviewers.. Add only a tablespoon of maple syrup to start, and 1 cup of sock, adding more if neeeded. Worked out so well, that the whole family loved it!

    I have learned my lesson as others before me have - read the reviews before making! While the dish turned out quite nice there was more than a cup of stock left over and if we had cooked the squash till the liquid had evaporated we would have had to throw it all out. Our adjustments would be to use only about 1C of stock to start with and to cook the entire dish in a LARGE cast iron pan.
