Excellent recipe! The flavors permeated the rabbit all the way through, so every bite was delicious, and the rabbit was very tender. I sprinkled the rabbit with the Essence about two hours before cooking to let the flavors work their magic. Otherwise, I followed the recipe exactly. I served it with a potato gratin and oven roasted asparagus. It was a big hit at my dinner party.

Emeril, you have really done it this time! I made this recipe using chicken rather than the rabbit, and it was flavorful and delicious. Definitely a keeper in our house. I did marinate the chicken in the essence in the refrigerator for a few hours because I was busy. Really good idea. The flavors really penetrated the chicken. Thank you.

I made this with chicken instead of rabbit and served it over rice. Mmmmmm, very good! Would definetly make again!
