    Good, but next time I would cut the hens in half and simply roast them. I would make the stuffing and bake in casserole dish on the side to serve.

    This was my first attempt at making cornish hens, I made them for my parents annual New Year's day open house. They turned out great I had to kick them up a notch and added garlic. I didn't have any peas but no one really ate the stuffing but the stuffing added a lot of flavor and the bacon was a great touch!

    This is the best cornish hen recipe that I have found! Simple and amazing. All the flavors go so well together and the bacon makes it twice as good! Definitely worth a try! My husband agrees :

    Ah, these were good. I made two cornish hens but didn't have any peas, but I did have corn on hand and substituted that for the peas. My mother came over that evening and she just kept saying, these are so tasty. It was so simple and, well, so tasty. Served over mashed potatoes. Hmmm, good.

    This recipe was just ok. Was expecting the chicken to be more flavorful. I felt that I should have basted the chicken more during cooking for more flavor. The sauce was so delicious that I was literally drinking it from the pan. Maybe will try it again and baste the chicken throughout the cooking.

    Came out perfect, added roasted garlic between the bacon and the hen, and gorgonzola mashed potatos, also turned the sauce into gravy adding flour. Very good recipe

    Everyone at the table loved this recipe, including the vegetable stuffing. Even the vegeterian, who sometimes each meat for vitamins and minerals, loved this recipe.
