Ingredients
- 1 tablespoon minced ginger
- 3 cups chopped strawberries
- 2 cups chopped pineapple
- 1 1/2 cups chopped mango
- 2 pieces lemon peel
- 2 pieces lime peel
- 2 pieces orange peel
- 4 cups water
- 1 1/2 cups sugar
- 1/4 cup fresh orange juice
- 2 tablespoons fresh lemon juice
- 2 tablespoons fresh lime juice
- 1 cup blueberries
- Mint sprigs, for garnish
Directions
Saute the ginger in a medium pot over medium-high heat until fragrant, about 2 minutes (no oil is necessary.) Add 2 cups strawberries, 1 cup pineapple, 3/4 cup mango and the lemon, lime and orange peels; cook for another 2 minutes. Add water, sugar and fruit juices and bring to a simmer, stirring occasionally. Simmer for 5 minutes and remove from the heat. Allow mixture to cool slightly and then transfer in batches to a blender or food processor. Puree and strain into a large bowl. Add remaining 1 cup strawberries, 1 cup pineapple, 3/4 cup mango and blueberries. Stir to combine, cover and refrigerate until well chilled. Serve with mint sprigs for garnish

Everyone loves this! I use zest instead of peel, 2/3 of the sugar, an immersion blender instead of transferring it to a blender, and don't strain it. I double the recipe and freeze it in bags. Take it out the night before, and serve while still frosty. Add remaining fruit before serving. So refreshing and delicious!

This soup was delicious. It was sweet and tangy, and the combination of the pureed/strained cooked fruit with the fresh fruit was great. It was sweet (but not too sweet and refreshing. My only complaint is with the quantities of orange, lime and lemon peel. I did not see this episode, so the term "2 pieces lemon peel" was hard to quantify! I spent quite a while debating (with myslef how big is a "piece"! I just ended up guessing (using a wedge size as a piece, and the taste of peel in the finished product was a little too strong for my husband, but I liked it. So, if you don't like the taste of peels, you should use very small pieces I guess (or omit them- not sure if the're necessary. The soup tasted great the next day too.
