What I love about this recipe: dressing is a step above your standard oil and vinegar. The lemon zest and mint bring an important layer of flavor to the dish that makes all the difference in the world. This is an absolute perfect summer salad. Healthy: check. Simple: check. Season-friendly: check. Good enough for company: check. It is The Best!!

One of the best tomato salads I have ever made. The dressing has just the right blend of sweet and tart. I reduced the olive oil by one half, and substituted dried lemon zest. I used sweet 100 cherry tomatoes right off the bush, and lemon basil which I grow in the yard. I loved the hint of mint. I passed feta cheese and fresh mozzarella cheese as topping. I liked the feta the best.

Served at a dinner party and it was a hit. I did use less oil and more balsamic vinegar. It is a nice addition to any summer meal

My husband doesn't like vegetables or anything outside of the box when it comes to food, but he loves this so much that he asks for it weekly! Great for a dinner or even a summer get together!

Do get beefsteak tomatoes or the tomatoes will be too watery and dilute the dressing.
