I'm an impatient cook. I doubled the recipe. I made the crust (only put it in the refrigerator for 15 min and then baked it (for 20 minutes - wasn't even close to being done but once I took it out I didn't want to put it back in. I thought about letting it cool for a bit but that didn't happen. Instead, I poured the lemon mixture onto the very under-done, hot crust and it immediately broke apart, mixing all together very unevenly. What I THOUGHT would be a total disaster turned out to be wonderful result. I put the mixture back into the oven for about 23 minutes and it turned out PERFECT. It came out a delicious, swirled type of lemon cookie. Put some powdered sugar on top and it was awesome. I think I just might make it like this every time. Yummy!

These were very delicious! I made them exactly as recipe called for. Family loved them too. I agree though, that the instructions for making had to be sorted out and re-read up and down to keep straight as to what went with what.

Made them for a family cookout and they were a big hit! Even someone that wasn't a fan of lemon squares tried it and said "mmmmmm, these are good!" And I had a request for the recipe. I would definitely make them again.

I made these for Easter and they were a HUGE HIT! Super Lemony-just the way I like them and I was just looking for an excuse to buy some
Limoncello(my favourite and the reason I chose this recipe. I agree that the recipe is slightly confusing and did have to re-read several times to get it straight.I prepped everything first and this helped alot. I doubled the recipe (8 lemons and used a cookie sheet pan as well (worked out perfect. I also added more lemon rind. It's only the end pieces that get a bit crusty and edges brown-(these are the ones you eat as you slice them cuz you won't be able to resist. P.S. Bragged to everyone that this is one of Emeril's recipes. OH YEAH BABY!

Love this recipe. I don't bake a lot, so I took the advice of other reviewers and read the recipe a couple of times before going ahead (it does help prepare for what's to be done and I am proud to say that my lemon squares came out DELICIOUS. These were actually easier to make than I expected. Will make them over and over...thanks Emeril.

These rock! Definitely recommend you include the limoncello which adds even more special lemony flavor. The crust is amazing. Don't change a thing!

These are exactly as described: super lemony, and absolutely delicious. I doubled the recipe and it fit perfectly in a sheet pan with about 5-7 minutes extra baking time to set the filling. The crust takes like shortbread, and the filling has just the right amount of tartness. Great recipe.

I made these the other night while watching 9 inches of snow accumulate outside. Took about 2.5 hours from start to taste. I thought directions were clear enough and all ingredients pefect. The crust might have been a little thicker and moving to a smaller pan would accomplish that but may not like the extra filling depth. Loved the tartness and texture. Wouldn't change a thing, they were delicious and I look forward to making them again. I noticed a comment about limes as a substitute and think thats sounds great. I'll try it also. Thanks for the recipe Emeril. Happy Cooking!

Great recipe, and fairly easy to do. I made these for my family this Christmas, but substituted gluten-free all-purpose flour for my sister who has Celiac's (a gluten-intolerance. It worked out perfectly! I would highly recommend this recipe.
