    Emeril, I am glad I found this. I keep losing my sister-in-law receip for the same coleslaw. I make it let it sit a day then put it small containers and freeze it. I am one person household and this is great coleslaw. We called Cheri's Freezer Coleslaw. Keep cooking Emeril

    My husband would never eat cole slaw UNTIL I made this recipe!! He LOVES it, and all my friends said the same. "Different", "excellent", "wow, no mayonaise!", "awsome flavor" were just a few of the comments. I have reduced the sugar slightly (only 1 cup, and I find the flavor is better if the Essence is added with the rest of the ingredients, so the "kick" is more pronouced. This is definitely a KEEPER for my family!

    I saw the show, saw Emeril make a simple syrup, then add vinegar, which is what I did. There's a huge quantity of tasty liquid in my bowl, and the hot simple syrup began the wilting of the coleslaw nicely and I'm sure helped the vinegar permeate too.

    I also made small thin slices of green pepper which made it showy.

    Inactive prep time 8 hrs? Mine sat 15 min. and was great. 20 hrs later, it is tastier.

    Served under a jerk-seasoning rubbed round roast, it was great! I made a spicy onion gravy using Essence since it is close in flavors to the jerk seasoning rub I had on the roast. I've been looking for a non-mayonnaise recipe for years, and this is delightful.

    Since I saw the show, lack of information, and lack of instructions, didn't deter a good result. Vera Dunmire, Florida Keys

    This has got to be a mistake in the recipe: 1 1/3 cups of sugar in 2 quarts of coleslaw?!? I just watched the show, and Emeril said he was putting a "simple syrup" into the coleslaw, which is sugar boiled down in water--much different than straight sugar.
