    This dish was very good tho it did take me a while to prepare...worth the effort! I made a few changes to it: I used a whole can of tomato paste (6 oz, used sweet peas instead of the lima beans and also parmesan and romano cheese in my mashed potatoes. I used twice the amount of Emeril's Essence and also cooked my lobster with the addition of shrimp in Old Bay Garlic Herb Seasoning. It turned out very well...my family loved it so I will definitely be making it again.

    Don't like lobster, so I used shrimp and scallops instead..a few dashes of Tabasco...delicious..

    I made this for four men - husband, son, and friends of son. They ate every last bit. Iin fact two of them had four servings each! I read another review about what a pain it was to cook and clean the lobster. We happened to have some rather large tails from Key West that we used which made it quite simple. My husband has been prompting me to make this again so I am making it for friends...will let you know how it fared with them.

    I tried this dish out on some friends for a birthday dinner celebration. We were all disappointed. Making this dish is quite a bit of trouble. Cooking and cleaning the lobster is a pain. And I added some fresh shrimp also. So I had to shelll and cook the shrimp. I substituted green peas for the lima beans (don't like limas much, and wanted some bright green for color. Even with the herbs and spices called for, and with some additional cayenne pepper, the dish was VERY bland. Noone wanted to take any leftovers home (and there was a lot left!. The next day, I put the rest down the disposal. I really hated doing that, because lobster and shrimp are expensive, and because I had worked so hard to make it.

    The recipe was ok, but nothing to get exicted about. With the lobster a bit expensive. I switch the lima beans out for green beans, other than that followed the recipe.

    A little time consuming but so well worth it. Great late summer recipe when corn is available. Great for special guests. I made it a day ahead and it was
    wonderful. Thanks emeril!!
