Ingredients

  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 12 tablespoons cold butter
  • 1 cup mashed roasted sweet potatoes
  • 1/2 cup ground pecans
  • 1/3 cup half and half

Directions

Preheat the oven to 450 degrees F. Grease a 1/2 sheet pan. In a mixing bowl, combine the flour, baking powder, baking soda, salt, and sugar together. Add the butter, and with your hands, work the butter into the flour mixture until the mixture resembles a coarse cornmeal. Stir in the sweet potatoes and pecans. Add the cream, a little at a time until a soft dough is formed. Lightly flour a surface. Place the dough onto the surface and dust the top with flour. Lightly press the dough out to 1/2 inch thickness. Using a 2 inch biscuit cutter, cut the biscuits into rounds. Place the biscuits on a greased baking sheet and bake for about 15 minutes or until the biscuits are golden brown.

    What you should expect for something so easy

    These are not a fluffy as I like my biscuits, however, it is quick and easy for a weeknight meal and good enough for that... use. I try to keep it healthy when I can, so I used wheat flour. Use only 1 cup wheat flour but use the same amount of baking soda, powder, salt and sugar as called for in the original. Cut the butter in half and still used almost a whole cup of sweet potatoes. It made 10 nice small dinner biscuits. Not too dry but they do not taste like sweet potatoes. I also used buttermilk instead of 1/2 and 1/2 in hopes that they would be buttery soft but it was still fairly dense. Everyone else liked them just fine.Read more

    I made these for Thanksgiving to take the place of rolls and a seperate sweet potato dish. I think that I made them a little... thinner than they should have been, but actually my guests raved about them. They were really easy to make. I'll try them again next year.Read more

    I used a cupcake pan instead of a biscuit cutter. The dough was to gooey but it turned out fine. I had some nuts left over... so I sprinkled them on top as well. I served them warm with butter. I will definatly make these again!Read more
