The colors add a really need aesthetic to this dish. A little bit of the sugar ended up crystallizing on me but it was still very sweet and the maple really added to the flavor of the caramel sauce.

I've made this recipe a few times now but instead of using sweet potatoes I substituted same amount of canned pumpkin instead. I wanted to give a new twist to the ol' pumpkin pie for the holidays. Also DO NOT ADD WATER TO YOUR SUGAR!! I ended up throwing away 2 batches (4cups of sugar cuz it crystalized on me. Just melt the sugar over low heat in a pan. It will carmalize much easier and the flavor is much more richer.

This recipe is very easy to make and it's one of the healthier recipes I have seen. I made this flan (w/o the web on different occaions. It's always a rave from the friends or co-workers. This recipe definitely will be kept for a long time.

I have made this flan twice now, and I am amazed at the ease of it. The sweet potato addes a beautiful deep color to the flan, but does not overwhelm the other flavors. The chocolate spider web is an impressive addition, but not at all necessary to make a great tasting dessert. In fact, those who have had the flan more than once request that I leave the spider web off.

The caramel sauce in the recipe calls for water to be added to the sugar to create the caramel sauce.
Do not add Water. It will never become caramel sauce... instead just melt the sugar.
Took me one hour to figure this one out!
